Breakfast "on the run"

Two eggs
2 tbsp. of milk
A pinch of dried basil or Italian seasoning
2 tbsp. of grated cheddar cheese
1/2 teaspoon of chopped parsley
Salt and pepper to taste

1) In a microwavable cup, beat together eggs, milk, salt, pepper, and basil
2) Cover with plastic film and turn over one corner to allow the steam to escape
3) Cook in the microwave at medium-high (70%) for 1 to 1-1/2 minutes
4) Remove the plastic wrap and stir. Sprinkle on the cheese and parsley; cover and let rest for one minute.




Smoked Salmon Pizza

3/4 cup cream cheese
1 tsp. dry dill
1 soft pizza shell (10 to 12 in. in diameter, precooked)
10 eggs
2 tbsp. milk
Salt and pepper to taste
2 tbsp. butter
6 ounces finely sliced smoked salmon
Freshly chopped chive

1) In a bowl, mix together cheese, cream, and dill
2) Heat the pizza shell according to packaging instructions
3) In another bowl, beat together eggs and milk: add salt and pepper
4) In a frying pan, melt butter over medium heat. Then add eggs and stir continuously until mixture thickens but is still moist
5) Sprinkle cheese on the hot pizza shell. Cover with eggs. Place salmon slices on the eggs and sprinkle with chive
6) Slice and serve immediately



Spicy egg fajita

4 slightly beaten eggs
2 tbsp. crushed chili pepper
1/4 tsp. garlic salt
1 tsp. vegetable oil
1 thinly sliced small onion
1/2 sliced green bell pepper
6 wheat tortillas
Salsa and guacamole as garnish
1) Mix together eggs, chili pepper, and garlic salt in a bowl. Set aside
2) In a frying pan, heat vegetable oil over medium heat and stir-fry the onions and green peppers until they are tender. Remove from pan and set aside
3) Pour half of the preparation into the frying pan and cook without stirring. When the eggs have almost set, turn them over
and continue cooking for 1 to 2 minutes. Remove the omelet from the pan, set aside, and do the same for the rest of the eggs.
4) Cut the omelet into strips
5) To serve, garnish the middle of each tortilla with green pepper, onion, and eggs strips. Add salsa and guacamole (one tbsp.each) and roll tortilla.




Strawberry Pavlova

4 eggs (separated yolks)
1 tsp. vanilla extract
1/4 tsp. cream of tartar
1/4 tsp. salt
1 1/3 cups sugar
1/3 cup lemon juice
1 cup whipping cream
4 cups sliced strawberries

1) Preheat oven to 120 degrees C. (250 degrees F.)
2) Cover a cookie sheet with aluminum foil. Draw a 23 cm. ( 9 inch) diameter circle in the middle.
3) In a large glass or metal bowl, use an electric mixer to mix the eggs together with the vanilla, cream of tartar, and salt until peaks form. Blend in the sugar (2 tbsp. at a time), beating well each time. Continue to beat until firm, smooth peaks form.
4) Pour inside the circle on the cookie sheet so that the sides are higher than the center. Cook in the oven for 1-1/4 to 1-1/2 hours until the batter becomes crusty on the outside and firm to the touch. Turn off the heat and let cool inside the oven, leaving the door slightly open.
5) In the meantime, in a casserole with a thick bottom, use an electric mixer to beat the egg yolks with 1/3 cup of sugar and lemon juice. Cook over low heat, stirring continuously for five minutes or until the mixture becomes thick and smooth. Cover with plastic wrap in such a way as the wrap touches the surface. Let cool.
6) Whip the cream until it is firm; blend into the lemon preparation. Before serving, cover with whipped cream and strawberries.
